Russia Potato Salad
A Russian Taste Treat
Russian Potato Salad for 4


This is a delicious, colorful and healthier salad than traditional potato salad.
Dice ingredients 1/4 the size of typical potato salad ingredients.

2 medium potatoes, diced
3 large carrots, diced
1/4 C red onions, diced
1 of your favorite dill pickles, diced
1/2 C petite green peas (buy frozen if you must, and start cooking according to package directions) UNDERCOOK the peas. Pam likes to use more peas.
2 hard boiled eggs, diced
4 sprigs fresh dill, finely chopped or 1 T dried dill
6 sprigs Italian flat leaf parsley, finely chopped
1/2 C mayonnaise
2 T white wine vinegar
Salt and pepper to taste

Cook whole carrots and potatoes about 20 minutes, dice them.

Mix all ingredients cold, cover, refrigerate until well chilled. Enjoy!
